a day’s eats

i love having meals prepped for the week.  so tonight instead of watching the superbowl i got busy roasting and cutting vegetables, and boiling some grains.

pear, banana, trail mix, overnight oats

breakfast and snacks.
overnight pumpkin chocolate  spiced oats.
trail mix, banana, pear.

curry couscous with carrots,
red bell pepper, tofu + spices.

+ likely (unpictured) snacks.

i’m hoping my planning will be especially useful tomorrow.
i’m on campus from 9 am until about 8 pm (including a meeting with pizza). yep.
